Arabian kabsa:

Ingredients:

For chicken:

• Chicken: 2kg(16 pieces)
• Chicken stock cube: 3 pieces
• Chopped Tomato: 2cup
• Tomato puree: 1/2cup
• Butter or ghee: 1/4cup
• Chopped Onions: 1/2cup
• Fried onions(beresta): 1cup
• Salt to taste
• Paprika or Red chili powder: 3 tea spoons
• Black pepper powder: 1tsp
• Ginger paste: 3 tea spoons
• Garlic paste: 2 tea spoons
• Bay leaves: 2
• Cumin powder: 2tsp
• Coriander powder: 2tsp
• Garam masala powder: 1tsp
• Cloves: 4
• Cardamom: 7(medium)
• Cinnamon: 4 sticks
• Oil: 1/2cup

For rice:

• Basmati rice or pulao rice: 5cup(washed)
• Lemon juice: 2tbsp
• Water : 10 cup

For toppings:

• Almonds, slivered or halved: 1/4cup
• Raisins: 1/4cup
• Cashew nuts: 2tbsp

Instructions:

Mix chicken pieces with fried onions (beresta), Garam masala powder, cumin powder, paprika, coriander powder and salt.
Place a large wide non-stick cooking pan over high heat and add oil.
Add chicken pieces with onion beresta mixture and fry it till golden brown.
Heat a saucepan and pour ghee in it and add onion, bay leaves, cinnamon, cardamom and cloves and fry it. Add tomato pieces and fry it till it totally soft (4 minutes).
Then add ginger garlic paste, Chicken stock cube, tomato puree and 1tsp red chili powder and mix them well. Cook it for 2 minutes until mixing all the ingredients properly and oil separates. Add 10 cup water and let it boil.
Then add the fried chicken pieces, adjust salt and cook on low flame till chicken is tender (20 minutes).
Now remove the chicken pieces from the stock and place it to a baking pan or frying pan and broil at high for 5 minutes or till the chicken turn’s brown. Be careful not to burn the chicken while broiling.
Add the soaked rice and lemon juice into the remaining stock and let it boil. Keep Stirring and mix well.
Cover the lid and keep over very low heat for 20 minutes. (Don’t move the lid at these time…this is very important part for getting perfect rice)
Heat a frying pan over medium heat, add 2 tbsp ghee and add toppings ingredients to it, fry till it turns light golden brown, Keep aside in a paper towel.
Now Place the cooked rice on a large serving dish, topped with the chicken & garnished with fried almonds, raisins.
Serve with a fresh mixed salad.
