pakan pithaঃ

This is the most popular and traditional pitha of south region of Bangladesh. And most important thing is it’s my husband’s favorite one.

Ingredients:

1. Milk : 2cup
2. Flour : 2cup
3. Egg : ½(beaten)
4. Breadcrumbs: ¼ cup
5. Salt: 1 tsp
6. Clarified butter/Ghee :2tbsp
7. Oil for deep fry

For syrup:

1. Sugar : 2cup
2. Water: 3cup
3. Green Cardamom: 4 pieces

Also need some pitha dice or a knife or a spoon.

Instructions:

Heat in a large heavy bowl; add milk, salt and ghee. When start to boil add flour and mix it nicely with milk and low the flame. Cover it and keep it for 5min at very low flame.

Transfer the dough to a saucepan. When it becomes cool, add some oil in your hands and knead it very well. The kneading part is very important for this pitha. Add some ghee, egg and breadcrumbs and knead well. You have to knead it for at least 10 minutes or until glossy.

Now make egg shaped balls or balls like picture.

Give them shape with pitha dice or you can shape them without the dice using a knife or a spoon.

Fry them at medium to low heat until they are golden brown.

In a large saucepan, add 3 cup water and 2 cup sugar. Add cardamom and Cook them for 10 minutes at high heat. Then turn off the heat. Set aside for 30 min.
Transfer the pithas into lukewarm syrup and soak them for at least 5 hours. If soaked well, the pithas will be soft.
