Beef/mutton liver vuna  :


  • Beef/mutton liver: 1/2kg(cut into small cubes)
  • Vinegar: 1tbsp
  • Oil: 1/4cup
  • Salt to taste
  • Red chili powder: 1 tsp
  • Turmeric powder: 1 tsp
  • Ginger paste: 1tbsp
  • garlic paste: 1tbsp
  • Coriander powder: 1 tsp
  • (Cardamom: 4, cinnamon: 4, clove: 3, bay leaf: 2 )pieces
  • Cumin powder: 1tsp(roasted)
  • Nutmeg powder: 1/4tsp
  • Coriander leaves: 1 tbsp(chopped)


  • Fried Onion(beresta): ¼ cup
  • Whole Green chilies: 4
  • Ghee: 2tbsp
  • Garlic: 6 cloves
  • whole cumin: 1tsp


Wash the liver cubes well.
In a saucepan add 3cup hot water, 1tbsp salt and 1tbsp vinegar and let it boil. Now add the liver into the boiling water and let it boil for 2minutes.then discard the water and properly wash them.
Heat oil in a karahi, add bay leaf, cardamom, cinnamon stick and cloves and let it cook for 1min.  Now add ginger paste , garlic paste and 1/2cup water .add all the powder masala  and salt and cook until oil separates. Now add the liver and mix with masala. Cover it and cook on low flame for 5 minutes. Then add 1 cup water and let it cook for 10 minutes on medium flame. Keep stirring occasionally.
Now add fried onion and green chilies and let it cook for 2 mins on low heat.
Heat ghee in another pan; add garlic clove and whole cumin and fry for just half minutes. Then pour it over the liver. Stir well then Cover and simmer for 5 minutes. Sprinkle coriander leaves and turn off the heat.
Delicious liver/kolija vuna is ready. Serve hot with plain rice or naan.
