Dudh khejuri pitha(দুধ খেজুর পিঠা)

Dudh khejuri pitha:

This is the most popular and most delicious pitha of Bangladesh. Its look like date seeds so it’s called khejur pitha.

Ingredients:

1. Milk :1/2 Litre
2. Flour :3 cup
3. Egg : 1
4.toast biscuits Breadcrumbs: ¼ cup
6. Sugar :3tbsp
7. Clarified butter/Ghee :2tbsp
8. Oil for deep fry

For syrup:

1. Jaggery: 1cup
2. Water: 3cup
3. Milk: 1litre

Instructions:

Heat in a large heavy bowl; add milk  and sugar. When start to boil add flour and mix it nicely with milk and low the flame. Cover it and keep it for 5min at very low flame.
Soak the biscuits in 1/4 cup milk. Let it soft, and then using hand discard the milk.

Transfer the dough to a saucepan. When it becomes cool, add some oil in your hands and knead it very well. The kneading part is very important for this pitha. Add ghee, egg and biscuits and knead well. You have to knead it for at least 10 minutes.
Now make egg shaped balls .and take a strainer and a pen.

Take one ball, using pen, press it on top of a strainer and start to fold from one end and finish it to another end.
Fry them at medium to low heat until they are golden brown.
In a large saucepan, add 4 cup water and 1 cup jaggery. Cook them for 15 minutes at high heat. Then turn off the heat.
After 20 min, add milk to the syrup. Transfer the pithas into lukewarm syrup and soak them for at least 5 hours. If soaked well, the pithas will be soft.
