prawn malaicurry
ingredients:
- Shrimp: 1 kg(medium sizes, remove heads)
- Onion paste: 1/2cup
- Ginger paste: 1tsp
- Garlic paste: 1tsp
- Ghee: 2 tbsp
- Mustard oil: 2 tbsp
- Thick Coconut (milk): 1cup
- Bay leaves:1
- Salt to taste
- Sugar: 1tbsp
- Paprika or Red chilli powder: 1tsp(I used paprika)
- Roasted Cumin powder: 1tsp
- Make powder garam masala( 2 stick cinnamon,4 cardamom,2 clove,1/4tsp mace(jaitri), 1/2 tsp shahijeera)
- Grind to a fine paste:(1/4cup fried onion(beresta),2tbsp raisins, some nuts)
- Green chilies: 6
Instructions:
- Add 1tsp salt and 1tsp red chili powder with shrimp and gently mix to coat well.
- Heat 2tbsp oil in a frying pan on high flame and add shrimp pieces and fry both side until little bit golden.
- Heat ghee and mustard oil in a saucepan, add bay leaf, onion paste, ginger garlic paste, cumin and garam masala powder, paprika and sugar, stirring all the time and adding a little water to keep the spices from burning. Cook for 2min or until oil separates.
- Gradually stir in the coconut milk extract and a little salt. Add grinded fried onion paste and stir well.
- Now place the shrimp pieces into the gravy. Add green chilies, Cover and cook for 10 min on medium to low heat.
- Turn off the heat and serve hot with pulao or rice.
