Raj kachori

Preparing puri:


  • Flour or atta: 1/2cup
  • Semolina or fine suji: 1cup
  • Salt: 1/2tsp
  • Baking soda: 1/4tsp
  • Water: around 3/4cup
In a bowl, mix atta, semolina, baking soda and salt.
Add water slowly, knead well and make a soft dough. Cover with a cloth and let it rest for 30 minutes.
After 30 minute, knead it again. Divide the dough into 8 balls. Cover the balls with cloth.
Heat 2 cup oil in a karahi.
Now Take a ball and roll out a little bit thin ruti.
when oil became hot add puri and press puri with spoon for puffing up. Ensure the oil is hot enough before frying the puri.
Fry until golden. let it cool and store in an air tight container.


Preparing raj kachori:


For filling:

  • Mashed potato: 1cup
  • Boiled chickpea: 1cup
  • Coriander leaves: 2tbsp
  • Chopped green chilies: 1tbsp
  • Crispy nimki or fuchka shell

For tamarind chatni:

  • Tamarind pulp: 1/4cup
  • Water: 1/2cup
  • Black salt as needed
  • Sugar: 2tbsp
  • Green chili paste: 1tsp
  • Coriander leaves paste: 1tbsp
  • Roasted red chili flakes: 1tbsp or as taste


  • Sugar: 2tbsp
  • Thick yogurt/curd: 1cup
  • Chat masala: 2tbsp
Mix all the filling ingredients and set aside.
In a bowl add all the tamarind chatni ingredients and mix very well. set aside.
In another bowl mix yogurt with sugar and chat masala. set aside.
Take a puri and using hand make a hole in one side. Put filling inside the puri, then place 2 crushed nimki over the filling. Sprinkle tamarind and doi chatni over the puri and Serve.
