Semolina rose pitha/pastry
Ingredients:
- Semolina/suji: 1cup
- Flour: 3cup
- Yogurt: 1/2cup
- Egg: 1
- (Melted butter+ oil): (1/2+1/2) cup or 1 cup melted butter or 1cup oil
- Baking powder: 1tsp
- Vanilla essence: 1tsp or you can use cardamom powder for flavor.
For syrup:
- Sugar: 2cup
- Water: 2.5cup
- Lemon juice: 2tbsp or you can use 4 green cardamoms for flavor.
Instructions
Preparing syrup:
Place the sugar and water in a saucepan and place over medium heat.
Stir until the sugar dissolves completely. Add lemon juice and turn off the heat. Set aside for cool completely.
Preparing pitha/pastry:
In a bowl, mix oil, butter, egg, vanilla essence and yogurt. Add semolina and baking powder and mix very well.
Add flour slowly (1 cup at a time) with semolina mixture. Knead the dough well and form a soft dough. Cover and let it rest for 20 minutes.
Divide the dough into 5 portions. Take one and roll the dough using a rolling pin for about ¼ inch thickness.
Using a glass or circle cutter make rounded pieces from the flat roti. (see picture)

Place 4 circles on top of each other like picture.
Then roll it (start from the top) and cut in half to form a rose shape like picture.
Preheat your ovenat 180C and Place rose pieces into a baking tray.

Bake for 30 minutes or until golden brown. Or you can fry it.
Place cold syrup over hot roses and let it cool completely. Refrigerate overnight then serve.
