Chicken tikka biriyani

Chicken tikka biriyani:

Preparing chicken tikka:

  • Chicken: 1(1.5kg) (cut into 8 pieces)
  • Thick Yogurt: 1/2 cup
  • lemon juice: 1tbsp
  • tandoori masala/ tikka masala: 2tbsp
  • tomato ketchup: 2tbsp
  • Ginger garlic paste: 1tbsp each
  • Red chilli powder : 1 tsp
  • Cumin powder: 1tsp
  • Salt: 1tsp
  • Ghee : 1/4cup
  • Red or orange food color: 1tsp
Wash the chicken and drain all water.


Mix all the above ingredients and marinate chicken for 4 hours or preferably overnight.


Heat a pan and add chicken pieces with the marinated masala into the pan.
Then cook on high flame until it becomes tender and all water dries up.


For bbq flavor, take a piece of coal and place it on a small steel bowl in the center of the pan, then add a few drops of ghee/ clarified butter to the lit coal and cover the pan so that the smoke is retained inside and gets absorbed by the chicken. Open the dish in 2 minutes and discard the coal.



Or Grill the chicken pieces for about 30 to 40 minutes, till the chicken is cooked properly.

 Preparing tikka gravy:

  • Thick Yogurt: 1/2 cup
  • Cardamom: 4, cinnamon: 3, clove: 4
  • Chopped tomato : 2 cup (5)
  • Ginger garlic paste: 1tbsp each
  • Red chilli powder : 2 tsp
  • Cumin and coriander powder: 1tsp each
  • Salt: 1tsp
  • oil : 2tbsp
  • garam masala powder : 1tsp
  • fried onion: 1/2cup
  • sugar: 1tbsp
 Heat the oil in a deep pan then add the cinnamon, cardamom and cloves followed by the fresh tomatoes and cook until tomato becomes tender
Add all the remaining gravy ingredients and 1/2cup water and cook for 5 mins or until oil separates.
Now add the chicken tikka into the pan and mix well with the gravy.
Cover and cook it for 5 mins on low flame.

Preparing rice:

  • Basmati/pulao rice: 4cup(3/4kg)
  • Salt to taste
  • Green chili: 4
  • Ginger paste: 1tsp
  • (Cardamom: 3(medium), cinnamon: 2, bay leaf: 2, Shahi jeera: 1tsp )

Wash rice and soak 30 minutes in water.then drain.

Heat 10 cup water in a bowl, add 1tbsp oil, ginger paste, and whole garam masala into the water bowl.
Now add rice to this water when it is boiling. Cook until 70% done(8 minutes).


Preparing biriyani:

  • Fried onions (beresta): 1/2cup
  • Garam masala powder: 1tsp
  • Ghee: 2tbsp
  • mix (2tbsp milk+ 1tsp kewra water+ pinch of saffron )
  • chopped coriander for garnishing


Now take a pan and spread 1/2 cooked rice and fried potatoes(if u wish). Spread 1/2 fried onions and powder garam masala and chicken tikka with gravy. Spread 1 tbsp ghee and milk kewra water mixture.



Again spread 1/2 cooked rice over the chicken, 1tbsp ghee and some fried onions. Cover the lid and cook for 10 minutes on low heat.
Turn off the heat, add coriander leaves and mix the biriyani before serving.
