Chicken tehari with mustard oil(shorshe tele chicken tehari)


Chicken tehari with mustard oil:


For chicken:

• Chicken: 1 kg
• Mustard oil: 1/2cup
• Yogurt/curd: 2 tablespoon
• Chopped onions: ½ cup
• Ginger paste: 2 tablespoon
• Garlic paste : 2 tablespoon
• Red Chili powder : 1 teaspoon
• Cumin powder: 1 teaspoon
• Cinnamon: 3
• Cardamom: 4
• Salt as needed
• Sugar: 1 tablespoon

For tehari:

• Cooked chicken with gravy
• Polau rice: 4cup
• Soyabean oil: 2 tablespoon
• Mustard oil: 2tablespoon
• Ghee: 1 tablespoon
• Salt as needed
• Water: 7cup
• green chilies: 10


Preparing chicken:

Heat mustard oil in a karahi, add onions and fry until golden.
Add all the ingredients and cook for 2 minutes until oil separates.
Add chicken and mix well.
Add 1/2 cup hot water, cover and cook for 20 minutes on low heat.

Preparing tehari:

Heat oil in a bowl; add rice and fry for 2 minutes on high heat.
Add 8cup water into the rice and adjust salt.
Once the rice starts boiling, add the chicken pieces with gravy and green chilies. Stir and mix well.
Cover and keep over very low heat for 20 minutes.( don’t move the lid at these time…this is very important part for getting perfect tehari)
After 20 minutes, open the lid and turn off the heat. Sprinkle ghee and mix with the tehari.
Serve hot.
