Fried rice


Fried rice:


  1. basmati or pulao rice : 2 cup(soaked for 15 minutes)
  2. egg: 2 ( beaten)
  3. butter: 2tbsp
  4. oil : 2tbsp
  5. chili sauce : 1tbsp
  6. soy sauce :1 tbsp
  7. fish sauce : 1tbsp
  8. cabbage : 1/2cup
  9. carrot : 1/2cup(julienne cut)
  10. medium sized prawn : ½ cup
  11. chicken breasts :1/2 cup(sliced into strips)
  12. sugar :1 tbsp
  13. chopped Garlic:1tbsp
  14. chopped green chilies : 1tbsp
  15. chopped spring onion (green) : 1/4 cup
  16. chopped capsicum (green and red) : 1/4 cup
  17. Freshly ground black pepper : 1 tsp(finely ground)


In a saucepan, combine 6cup hot boiling water, rice, 1tbsp oil and 1 teaspoon of salt and cook the rice on high flame for 10 minutes or until 90% done. Drain and then run them under cold running water, and drain again. Cover and refrigerate until cold.
Marinate prawn and chicken with 1tsp sugar, salt and corn flour.
Heat a pan over a high heat. Add the oil and garlic. Now add the beaten eggs, and stir with a wooden spoon for a few minutes until lightly scrambled. Place to one side.
 Then add green chilies and heat until smoking. Then, add the prawn and chicken, and stir fry for 2 to 3 minutes, or until cooked through. Then add the carrots, Stir fry for a while, and then add the capsicum, cabbage and spring onion.
Now Add the cold rice and stir fry for 2 minutes or until heated through. Add all kind of sauce and stir-fry for a further 1 min. sprinkle black pepper and 1tbsp sugar, to taste. Stir constantly. Mix well and cook for 5 min on low heat.
Adjust salt and Turn off the heat and add 2tbsp butter and Stir well and serve immediately.
