Freshly ground black pepper : 1 tsp(finely ground)
Chopped coriander leaves: 1tbsp
sugar :1 tsp
ghee: 2tbsp
oil : 2tbsp
Instructions:
Wash chira in cold running water and drain the water properly.stir and let it rest for 10 minutes.
Heat a pan over a high heat. Add the oil, chopped and garlic. Now add the beaten eggs, and stir with a wooden spoon for a few minutes until lightly scrambled. Place to one side. Now add the cubed potatoes and shallow fry till they turn golden.
Then add green chilies and heat until smoking. Then, add the prawn, turmeric powder and stir fry for 2 to 3 minutes, or until cooked through. Then add the carrots and green peas, Stir fry for a while, and then add the capsicum and fry till the all vegetables are tender.
Now Add the dry chira and stir fry for 2 minutes or until heated through. Sprinkle black pepper, coriander leaves and 1tsp sugar, to taste. Stir constantly. Mix well and cook for 5 min on low heat.
Adjust salt and Turn off the heat and add 2tbsp ghee and Stir well and serve immediately.
