khejur gure dudh kodu(bottle guard kheer with date jaggery)
1. bottle guard- 2cup(finely grated, removed The soft inner part)
2. Milk – 3 cup
3. Date jaggery – 1 cup
4. Powder milk: 1cup
5. Ghee (clarified butter) – 2tbsp
6. Almonds:10(chopped roughly)
7. Cardamom powder (elachi): 1/2tsp
8. Mawa/khoya/chana: 1/4 cup(optional)
Wash, peel and finely grate the bottle guard. (Use the small hole for grating)
Heat 2 tbsp ghee/clarified butter in a thick bottomed deep pan; add the grated bottlen guard, cardamom powder and fry on low heat until all water dries up and raw flavor gone. Stir occasionally.
Now add milk and let it boil. Cover and cook for 20 minutes on low flame or until the bottle guard soft and tender. Now add powder milk and mawa and mix well. Let it cook for another 5 minutes. Turn off the heat.
Heat in another bowl, add date jiggery,1/4 cup water and cook until boil and thick (around 5 minutes). turn off the heat and pour the jaggery over the bottle guard mixture. mix well.
Add chopped almonds. Stir very well. Let it cool completely. serve cold.
