Layered carrot Sandesh
Preparing cheese/chana misture:
- Chana/cottage cheese: 2cup
- Milk powder: 1cup
- Egg: 1
- Sugar and milk: 1/3cup each
- Cardamom powder: 1/2tsp
In a blender add all above the ingredients and blend it for 2 minutes or until smooth (or you can use electric beater for mixing). set aside.
Preparing carrot mixture:
- Finely chopped carrot: 2cup
- Ghee/butter: 2tbsp
- Milk powder: 2tbsp
- Sugar: 1/4cup
- Whole Milk: 1/2cup
- Rose water: 1/2tsp
In a pan, add all above the ingredients except rose water. Cover and cook on low flame until carrot tender and all water dries up. Turn off the heat and set aside.
Now take a heatproof bowl or baking dish and spread 1tbsp butter all over the bowl.
Place half of the chana mixture into the bowl and Level it with spatula.
Spread carrot mixture over the chana mixture and again place leftover chana mixture over the carrot mixture.
Bake in a preheated oven,350F/175C for 40 minutes.
Remove from oven and let it cool completely. Cut into square and serve at room temperature.
