Prawn kofta biriyani (চিংড়ি কোফতা বিরিয়ানী)


Prawn kofta biriyani:


For kofta:

  • Small or medium prawns: ½ kg
  • Onion paste: 2tbsp
  • Ginger paste: 1tsp
  • Garlic paste: 1tsp
  • Green chilies paste: 1tbsp
  • Bread crumbs: 1/4cup
  • Egg white: 2
  • Salt: 1tsp
  • Turmeric powder : 1tsp
  • Roasted Cumin powder: 1tsp
  • Garam masala powder: 1 tsp
  • Cornflour:2 tbsp(mix with 1tbsp water and make paste)

For kofta gravy:

  • Onion paste: 1/4cup
  • Ginger paste: 1tsp
  • Garlic paste: 1tsp
  • Ghee: 2 tbsp
  • Mustard oil: 2 tbsp
  • Coconut (milk): 1cup
  • Bay leaves:1
  • Salt to taste
  • Sugar: 1tbsp
  • Paprika or Red chilli powder: 1tsp(I used paprika)
  • Roasted Cumin powder: 1tsp
  • Garam masala powder: 1 tsp
  • Grind to a fine paste:(1/4cup fried onion(beresta),2tbsp raisins, some nuts)

For biriyani:

  • Basmati or chinigura rice: 1kg(5 cup)
  • Water:10 cup
  • Powder milk:1/4cup
  • Green chilies: 10
  • Ghee: 3tbsp
  • Salt to taste
  • Cardamom : 4
  • Cinnamon: 3
  • Whole Onion :1
  • Ginger slice: 1tsp
  • Garlic slice: 1tsp


Preparing kofta:

Remove the heads and shells from the prawns. Grind prawns into fine paste.
 Add all kofta ingredients and using an electric beater or egg beater, whisk all ingredients. Set aside.

Preparing gravy:

Heat ghee and oil in a saucepan, add bay leaf, onion paste, ginger garlic paste, cumin and garam masala powder, paprika and sugar, stirring all the time and adding a little water to keep the spices from burning. Cook for 2min or until oil separates.
Gradually stir in the coconut milk extract and a little salt.
Wet your hands with little bit of water. Now make small balls shape and place the balls into the gravy. Cover and cook for 10 min.
Remove the kofta from the gravy. Set aside.

Preparing biriyani:

In a muslin cloth place 1 onion, cardamom, cinnamon, ginger and garlic. Now Gather up the edges of the cloth and tie tightly with a piece of string to form a bundle.
Pour 10 cup water into a bowl and Heat the bowl on medium heat.
Put this bundle in the bowl. Cover and cook for 20 min.
In another deep pan, add ghee and green chilies and fry for 1 min. now add the kofta gravy and cook for add the flavor water into the pan, add powder milk adjust salt and cook until boil. Add rice and Cook on medium flame till the mixture comes to a boil, then reduce the flame to a simmer, cover and cook till the rice is half done.
Now place your kofta over the rice and again cook for 10 min on low flame. Turn off the flame and add some ghee and fried onion and mix it.
Cover the hot biriyani and set aside.
After 10 min your biriyani is ready to serve.
