Tamarind, jujube and onion pickle:
This is a finger licking pickle. It is also delicious, sweet, sour and spicy. [Source: siddika kabir recipe]
• Ripe Tamarind: 1kg
• Dry Jujube: 500 gm
• Onion: 1/2kg(chopped)
• Jaggery: 1kg
• Panch foron powder: 1tbsp
• Red chili flakes: 2tbsp
• Salt to taste
• Mustard oil: 1/2cup
Remove the seeds from the tamarind.
Add 2 cup water with the tamarind and set aside for 20 min.
Pour the tamarind extract mixed water through a sieve on a bowl. Squeeze the tamarind flesh on to the sieve so that the tamarind extract comes out as much as possible. Set aside on a bowl.
Place the tamarind pulp in a large plate and spread the pulp. Set the pulp for sun drying for 2 days. After two days the pulp will become thick.
Place the chopped onion in a plate and Set the onion for sun drying for 1 day.
Place the jujube with water and set for 4 hours.
Heat 2 cup water and jaggery in a bowl and add dry jujube. Cover and Cook for 1 hour on low to medium heat.
Remove the jujube from heat and mix with onion and tamarind pulp. Add mustard oil and mix well. Add salt, red chili flakes and panch foron to the mixer.
Cool down the mixture and put it in the air tight jar. Place the pickle for two day in the sun to bring out the flavor.
