1. Olive: 1kg
2. Jaggery: ½ kg
3. Salt to taste
4. Whole red chilies: 10
5. Mustard oil: ¼ cup
6. Panch phoron: 2 tbsp
7. Whole Garlic : 2(whole pieces)
8. Cardamom : 4 pieces
9. Mustard seeds : 1tbsp
10. Coriander seeds :1tb sp
11. Vinegar : ¼ cup
12. Bay leaf : 1
Boil the olive for about 20 minutes or till tender.
Drain water and mash the olive well with hand in a bowl. Keep the seeds with olive.
Fry the red chilies, mustard seeds, coriander seeds and panch phoron. Grind them well into a food processor.
Heat oil in a heavy pan, add cardamom, bay leaf. Then add olive.
Mix the olive with salt, garlic, all spices and jaggery . Stir everything together. Cook for 15 minutes at low heat.
Add vinegar and cook it in low heat for another 5 minutes.
