Yogurt fish curry (doi mach):

Ingredients:

• Big fish (rui or salmon or catla): 1kg(cut into big pieces)
• Yogurt: 1cup
• Turmeric powder: 1tsp
• Salt as needed
• Sugar: 1tsp
• Oil: 1/2 cup
• Ghee: 2tbsp
• Onion paste: 1/2cup
• Ginger paste: 1tbsp
• Garlic paste: 1tsp
• Cardamom paste: 1tsp
• Cinnamon paste:1tsp
• Clove:5
• Bay leaf: 2
• Fried onion: 1/2cup
• Green chilies: 5

Instructions:

Wash the fish properly.
Add 1/2tsp turmeric powder and 1tsp salt with fish and mix well.
Heat 1tbsp oil in a frying pan on high flame and add fish pieces and fry both side until little bit golden.
Now add the fish pieces with 1 cup yogurt and gently mix to coat well. Marinate for 30 minutes.
Heat In a sauce pan, add oil and 1tbsp ghee. Now add bay leaf, clove, 1/2tsp turmeric powder and all paste masala into the pan. Cook until oil separates.
Add the marinated fish and the marinade and mix gently but well. Season with salt as required and Stir occasionally. Do this gently to avoid breaking the pieces of fish.
Add 1cup water and cook till fish is done (about 10 min) on medium flame.
Now add 1/4cup fried onion, sugar and green chilies. Cover the lid and cook for 5 min on low flame or until oil separates. Sprinkle 1tbsp ghee and cover the lid for 1 min.
Turn off the heat and pour into a dish and sprinkle 1/4cup fried onion.
Serve with polau or basmati rice.
