In a bowl Mix flour and chicken pieces and deep fry chicken pieces(5 mins) until just golden (don’t over cooked the chicken).
In a frying pan, add oil and garlic and stir fry for a few seconds. Add capsicums, carrot slices and stir fry for one minute.
Add the chicken pieces and stir fry for 1-2 minutes, then add the stock and all sauces. Simmer for another minute, or until the chicken is cooked through.
Stir in the spring onions, Red chilies and cashew nuts, season, to taste, with 1 tsp sugar and transfer to a serving dish.
