Tandoori chicken


Tandoori chicken:


  • Chicken: 1(1.5kg) (cut into 4 pieces or more)
  • Thick Yogurt: 1/2 cup
  • lemon juice: 1tbsp
  • tandoori masala: 2tbsp
  • tomato paste/puree: 2 tbsp
  • tomato ketchup: 2tbsp
  • Ginger paste: 1tbsp
  • Garlic paste: 1tbsp
  • Red chilli powder : 1tsp
  • Roasted Cumin powder: 1tsp
  • Coriander powder: 1tsp
  • Salt: 1tsp
  • Ghee : 1/4cup
  • Red or orange food color: 1tsp


Wash the chicken and drain all water.
Mix all the above ingredients and marinate chicken for 4 hours or preferably overnight.
Preheat the oven to 200c and place chicken pieces on a wire rack.
Then Brush chicken pieces with ghee.
Take Baking tray, place wire rack on the top of it  and bake the chicken for 30 minutes.
After 30 minutes flip the chicken,brush some ghee and again bake for 20 more minutes.


Grill the chicken pieces for about 30 to 40 minutes, till the chicken is cooked properly.


Heat a pan and add chicken pieces with the marinated masala into the pan.


Then cook on high flame until it becomes tender and all water dries up.




For bbq flavor, take a piece of coal and place it on a small steel bowl in the center of the pan, then add a few drops of ghee/ clarified butter to the lit coal and cover the pan so that the smoke is retained inside and gets absorbed by the chicken. Open the dish in 2 minutes and discard the coal.
Serve chicken immediately with naan and raita
