Muroghonto (মুড়োঘন্ট)




big fish head (rui or katol ) : 1
• polau or basmati rice : ¼ cup
• moong dal: ½ cup
• masoor dal:2tbsp
• turmeric powder :2tsp
• red chilies powder :1tsp
• potato :2(cut into cubes)
• onion :2 chopped
• Cumin powder-1 tsp
• Coriander powder-1 tsp
• green chilies : 3
• bay leaves : 1
• Salt to taste
• mustard oil: 1/3 cup
• ginger paste : 1 tbsp
• garlic paste : 1 tbsp
• cardamom :3
• cinnamon sticks: 2
• clove:3
• ghee: 1tbsp(optional)
• fried onion(beresta): 2 tbsp
• sugar: 1tsp


Wash the fish with salt and lemon juice. Pat them dry with absorbent kitchen paper.
Coat pieces of fish head with salt and turmeric powder.
Heat oil in a fry pan on high flame, add fish and fry them until golden.
Roast moong dal until it crispy.mix rice and dal in a bowl and add water .wash and soak it for 30 minutes.
Heat oil in a saucepan, add onion and fry it. Now add cardamom, cinnamon, clove and bay leaf and stir it. Add all powder and paste and cook until oil separates. Add salt and fried fish. Cook on low flame for 5 min .now adds rice and dal mixer and cover the lid. Again cook on low flame for 5 min. now add 2 cup water and cover and cook over moderate heat. Stir occasionally.
Cook until dal become tender. (If required add more hot water while cooking)
Adjust salt and now add sugar,green chilies, ghee and fried onion. Cover and cook for another 5 min on low flame.
Turn off the heat .serve hot with rice or roti.
