Semolina(suji) pitha


  1. water : 2cup + 1/2cup
  2. semolina(suji) : 1cup+ 1/2cup
  3. Egg yolk :3
  4. Salt: 1/2 tsp
  5. Clarified butter/Ghee :2tbsp
  6. Oil for deep fry

For milk syrup:

  1. Sugar : 1cup
  2. milk: 4cup
  3. Green Cardamom: 4 pieces


Heat in a large heavy bowl; add water, salt and ghee. When start to boil add semolina and mix it nicely with water and low the flame. Cover it and keep it for 2min at very low flame.
Transfer the dough to a saucepan. When it becomes cool, add some oil in your hands and knead it very well. Add egg yolks one by one and knead it well after each addition. The dough becomes soft.
Now make medium sizes balls. decorate with spoon or hand or (pithar shaj).

Fry all pithas on medium to low heat until they are golden brown.
In a large saucepan, add milk and sugar. Add cardamom and Cook them for 10 minutes. Stir occasionally. Turn off the heat.
Transfer the pithas into warm milk and soak them for at least 5 hours. If soaked well, the pithas will be soft.
