Sweet&sour Elephant apple(chaltar achar):


1. elephant apple(Chalta): 2
2. Sugar: 1cup
3. Salt to taste
4. Whole red chilies: 5
5. Mustard oil: 1/4cup
6. Panch phoron: 2 tbsp
7. Mustard seeds: 1tsp
8. cumin seeds :1tsp
9. Bay leaf :1
10. Red food color : 1tsp

11.chopped garlic: 2tbsp


Cut the chalta at small pieces.
Boil the chalta for about 20 minutes or till tender.
Drain water and set aside.
Fry the red chilies, mustard seeds, cumin seeds and panch phoron. Grind them well into a food processor.
Heat oil and chopped garlic into a heavy pan, fry for 1 minute. Add sugar, all grinded spices and chalta.
Mix the chalta with salt, all spices. Stir everything together. Cook for 20 minutes at low heat.
Add red food colour and cook it in low heat for another 5 minutes or till dry.
Let it cool completely and enjoy…
