Heat oil in a karahi,add mustard seeds and cumin seeds. When the seeds crackle, add the onion and sauté till the onion is golden brown. Now add the tomato and Cook until the water from the tomato evaporates. Then add ginger garlic paste, turmeric and red chili powder, cumin powder, chole masala , salt and tomato paste and cook for 2 mins.
Now add the chickpeas, potato and 1 cup of water and mix well. Simmer for 15 minutes. Sprinkle sugar and adjust salt and garnish with chopped coriander. Keep aside.
Preparing Bhature:
Ingredients:
flour (Maida): 3 cups
Semolina (Shuji): 1/2 cup
Baking Powder: 1 tsp
Salt : 1/2tsp
Sugar : 1 tsp
Yoghurt: 1/2 cup(mix with 1tbsp oil)
warm Water to prepare the dough(around 1 cup)
Enough Oil for deep frying
Mix flour, semolina, baking powder, sugar, salt and rub the flour with yogurt.
Add water and make a smooth dough .cover with wet cloth and Let this rest in a warm place for 2 hours or preferably overnight.
Divide the dough into 10 balls. spread 1/2tsp oil in your surface and roll it out into rutis(not so thin).
Heat oil (2cup) in a karahi and place the ruti in the very hot oil and press with a skimmer. The bhature should puff up. Turnover and cook till it becomes brown in color.
