Shahi firni


  • Milk -2 litre
    • Chinigura/basmati rice- 1/2cup (soak for 1 hours and coarsely grind using hand)
    • Sugar as needed
    • Cardamoms and cinnamon – 4 each
    • chopped Pista and almond nuts: 1/4cup
    • milk powder: 1.5cup
    •rose water: 1/2tsp
  • ghee: 2 tbsp


Heat milk, cardamom and cinnamon in a heavy pan and stir occasionally until it starts to boil. Simmer the flame and reduce to 1.5 litre, stirring constantly.
Heat ghee in a pan and add rice. Fry it for 1 minute, then add 2 cup hot water. Cook until rice become tender. Turn off the heat.
Now add rice, milk powder and sugar into the hot thicken milk and mix very well. Cook on low flame for 20 minutes or until firni become thick.
Then Add rose water and all nuts to it and cook the firni for 2 minutes while stirring continuously.
firni is ready. Garnish with nuts and Serve cold.
